Ingredients

  • 2 medium cucumbers
  • 2 medium tomatoes, chopped
  • 2 green onions with tops, chopped
  • 1 Tbsp. snipped parsley
  • 1 c. unflavored yogurt
  • 1/2 tsp. salt
  • 1/4 tsp. ground cumin

Method

  • Cut cucumbers lengthwise into halves.
  • Scoop out seeds and cut cucumbers into 1/2 inch pieces.
  • Mix cucumbers, tomatoes, onions and parsley.
  • Cover and refrigerate at least 4 hours but no longer than 24 hours.
  • Mix yogurt, salt and cumin.
  • Cover and refrigerate at least 4 hours and no longer than 24 hours.
  • Drain vegetables and fold into yogurt mixture.
  • Garnish with additional chopped cucumbers and tomatoes if desired.
