Ingredients
- 2 medium cucumbers
- 2 medium tomatoes, chopped
- 2 green onions with tops, chopped
- 1 Tbsp. snipped parsley
- 1 c. unflavored yogurt
- 1/2 tsp. salt
- 1/4 tsp. ground cumin
Method
- Cut cucumbers lengthwise into halves.
- Scoop out seeds and cut cucumbers into 1/2 inch pieces.
- Mix cucumbers, tomatoes, onions and parsley.
- Cover and refrigerate at least 4 hours but no longer than 24 hours.
- Mix yogurt, salt and cumin.
- Cover and refrigerate at least 4 hours and no longer than 24 hours.
- Drain vegetables and fold into yogurt mixture.
- Garnish with additional chopped cucumbers and tomatoes if desired.
