Ingredients
- 1 c. diced celery
- 3 diced carrots
- 1 tsp. salt
- 2 Tbsp. finely diced tomatoes
- butter
- paprika
- 8 c. water
- 1 small onion, chopped
- 2 to 3 diced potatoes
- 1 small parsley
- flour
Method
- Put water in large pot.
- Add celery, carrots, onion and salt. Boil until vegetables are half done.
- Add potatoes, tomatoes and parsley.
- Continue boiling until vegetables are done.
- In small pan, brown butter with flour; add paprika for color.
- Add to soup and let it come to a boil.
