Ingredients
- 25 or 30 large cucumbers
- 1/2 c. salt
- 2 tsp. pepper (black)
- 1 tsp. red pepper
- 2 or 3 c. sugar
- 2 or 3 c. vinegar
- onions as you like
Method
- Chop cucumbers and onions; put 1/2 cup of salt over them.
- Let stand 45 minutes until it makes a brine; drain.
- Mix all other ingredients; pour over cucumbers and onions.
- Cook over medium heat until it changes color.
- Pack into jars and seal.
- Makes around 12 quarts according to size of cucumbers and onions.
