Ingredients
- 1 (9-inch) baked pie crust (made from polyunsaturated fat)
- 1 (1 lb.) can pumpkin
- 2 (4 oz.) pkg. sugar-free vanilla pudding (not instant)
- 2 c. skim milk
- 2 tsp. pumpkin pie spice
Method
- Pour milk into 2-quart saucepan.
- Stir in pudding and pumpkin pie spice until dissolved.
- Add pumpkin and blend until well combined.
- Heat mixture on medium heat until it boils.
- Gently cook 1 minute and stir to prevent burning.
- Pour into cooled crust and chill.
