- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 large egg
- 1/2 cup vegetable oil
- 1/2 cup orange juice
- 1 tablespoon grated orange zest
- 1/2 cup packed brown sugar
- 1/2 cup chopped pecans
- 1/4 cup all-purpose flour
- 2 tablespoons butter, melted
- 1 teaspoon ground cinnamon
Method
- In a large bowl, combine the first seven ingredients. In a small bowl, combine the egg, oil, orange juice and zest; stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full.
- Combine topping ingredients; sprinkle heaping tablespoonfuls on each muffin. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
