Ingredients

  • 3 c. Corn Chex crushed to 1 c.
  • 1/4 c. flour
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon grnd thyme
  • 1/4 teaspoon grnd basil
  • 1 egg
  • 1/4 c. lowfat milk
  • 1 cut up rabbit
  • 1/2 c. butter

Method

  • 1.
  • Combine Chex crumbs, flour, salt, paprika, pepper, thyme and basil.
  • Set aside.
  • Beat together egg and lowfat milk.
  • 2.
  • Dip rabbit in lowfat milk mix.
  • Roll in crumb mix.
  • Brown well in butter.
  • Cover.
  • 3.
  • Cook over low heat 40 min or possibly till tender.
  • Remove cover last 10-15 min of cooking for crisper crust.
  • Or possibly Heat oven to 400 degrees.
  • Heat butter in a shallow baking pan.
  • Place rabbit in butter.
  • Bake 25 min.
  • Turn.
  • Bake 15-20 min longer or possibly till golden and tender.
  • Yield 3-4 servings.
