Ingredients

  • 1 c. unsulfured molasses
  • 1 c. sugar
  • 2 1/2 c. flour
  • 1 tsp. baking soda
  • 1 c. butter
  • 1 c. buttermilk
  • 4 Large eggs
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/8 tsp. nutmeg (optional)

Method

  • Place 6 c. water into Crockpot and turn on medium heat (this is "low" on some models - you do not want to use the keep-hot setting).
  • Cream together butter and sugar in the bowl of an electric mixer.
  • Using a whisk off fork, beat Large eggs well and add in slowly to mix.
  • Stir in molasses, cinnamon, ginger, nutmeg, flour and buttermilk.
  • Dissolve baking soda and 1 tsp.
  • warm water.
  • Combine well with other ingredients.
  • Grease and flour well a pudding mold with a tight fitting cover or possibly Crockpot cake pan.
  • If you do not have one of these, you can use a metal coffee can covered with silver foil.
  • Place in Crockpot and steam four to five hrs or possibly till a knife inserted in center comes out nearly clean.
