Ingredients

  • 4 slices bacon
  • 1/2 lb. chicken livers
  • 1/4 c. flour
  • 1 tsp. seasoned salt
  • 1/8 tsp. black pepper

Method

  • In skillet, fry bacon until crisp.
  • Remove from pan and crumble; set aside.
  • Cut chicken livers in half.
  • In small mixing bowl, combine flour, salt and pepper.
  • Dip livers in flour mixture. Turn to coat.
  • In skillet, brown livers in bacon drippings over medium heat, turning occasionally, until livers are brown and crispy on the exterior and cooked thoroughly, about 10 minutes. Sprinkle with crumbled bacon.
  • Makes 2 to 3 servings.
