Ingredients

  • 1 c. shortening
  • 1 c. white sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 c. crisp cold cereal
  • 2 c. quick rolled oats
  • 1 c. shredded coconut (walnuts or chocolate chips may be used instead)

Method

  • Cream shortening, sugar (white and brown).
  • Add beaten eggs and vanilla and mix until smooth.
  • Add flour with soda, salt and baking powder added and mix well.
  • Add cold cereal, rolled oats and coconut and mix thoroughly.
  • The dough will be crumbly.
  • Roll into balls the size of a walnut.
  • Place on greased cookie sheet and press slightly.
  • Bake at 350°
  • for 12 to 15 minutes.
