Ingredients

  • 3/4 c. sugar
  • 1/3 c. flour
  • 1/8 tsp. salt
  • 2 c. milk, scalded
  • 1/2 tsp. vanilla
  • 2 Tbsp. butter
  • 2 eggs, beaten
  • 1 (14 oz.) pkg. coconut
  • 4 egg whites
  • 1 Tbsp. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Method

  • Combine flour, salt, sugar and butter, in this order.
  • Add scalded milk slowly, stirring constantly to large saucepan.
  • Cook slowly on medium-low heat until thick and smooth, stirring constantly.
  • Add 12 ounces coconut.
  • Pour into baked pie shell.
