Ingredients
- 3/4 c. sugar
- 1/3 c. flour
- 1/8 tsp. salt
- 2 c. milk, scalded
- 1/2 tsp. vanilla
- 2 Tbsp. butter
- 2 eggs, beaten
- 1 (14 oz.) pkg. coconut
- 4 egg whites
- 1 Tbsp. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
Method
- Combine flour, salt, sugar and butter, in this order.
- Add scalded milk slowly, stirring constantly to large saucepan.
- Cook slowly on medium-low heat until thick and smooth, stirring constantly.
- Add 12 ounces coconut.
- Pour into baked pie shell.
