Ingredients

  • 1 cup barbecue sauce
  • 3 3/8 tablespoons maple syrup
  • 3 3/8 tablespoons whiskey
  • 7/8 cup whipping cream
  • 1 pinch chilli powder to taste
  • 2 1/4 pounds diced beef casserole
  • 1 1/8 pounds turkey breast diced
  • 3 yellow peppers mixed red and, deseeded and diced
  • 3 onions peeled and diced
  • 1 1/8 pounds potatoes peeled and diced
  • 10 sprigs fresh marjoram little reserved for garnish, remaining leaves stripped from stems
  • creme fraiche
  • crusty bread

Method

  • To make the soup base, mix the barbecue sauce, maple syrup, whiskey, cream and 1 quart water. Season with salt, black pepper and chili powder to taste.
  • Place the beef, turkey, peppers, onions, potatoes and marjoram in a large pot. Pour in the soup base. Cover, bring to a boil and cook over medium heat for 1 hour 30 minutes. Garnish with marjoram and sprinkle with black pepper. Serve with crusty bread and sour cream.
