Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped fine
  • 14 cup finely chopped red onion
  • 1 (32 ounce) package soft tofu
  • 12 cup water
  • 3 12 tablespoons tamari or 3 12 tablespoons light soy sauce
  • 1 12 teaspoons dried sweet basil leaves
  • 2 cups hot cooked pasta
  • 14 cup chopped fresh parsley

Method

  • Heat the olive oil in a small pan.
  • Add garlic and onion and saute over medium-low heat until the onion is translucent.
  • In food processor, blend the tofu until it reaches a uniform consistency.
  • Pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat.
  • Add water, tamari, and basil to the pan and cook for 5 minutes more.
  • Pour the tofu sauce over cooked pasta.
  • Toss well and sprinkle with parsley.
  • Serve immediately.
