Ingredients
- 2 eggs, beaten
- 1 1/2 c. sugar
- 1/2 c. oleo, softened
- 1/4 c. flour
- 1/2 c. milk
- 1 tsp. vanilla
- 1/4 tsp. almond extract
- 2 c. Angel Flake coconut
Method
- Mix eggs and sugar.
- Add oleo, flour, milk, vanilla and almond extract; mix well.
- Add 1 1/2 cups of coconut and pour into an unbaked 9-inch pie crust.
- Top with remaining 1/2 cup coconut. Bake at 325° for 50 to 60 minutes.
