Ingredients

  • 2 c. Bran Buds
  • 1 c. boiling water
  • 1 c. vegetable oil
  • 1 1/2 c. white sugar
  • 2 eggs
  • 1 c. unprocessed bran
  • 2 c. flour
  • 2 c. buttermilk
  • 1/2 c. molasses
  • 2 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Pour boiling water over Bran Buds.
  • In large mixing bowl add vegetable oil, sugar and eggs; beat together until sugar is dissolved.
  • Add unprocessed bran, 2 cups flour, soaked Bran Buds, buttermilk, molasses, baking soda and salt.
  • Mix well.
  • Bake in muffin tins at 375° for 25 minutes.
  • Batter can be kept in covered container in refrigerator for up to 6 weeks.
