Ingredients
- 2 c. Bran Buds
- 1 c. boiling water
- 1 c. vegetable oil
- 1 1/2 c. white sugar
- 2 eggs
- 1 c. unprocessed bran
- 2 c. flour
- 2 c. buttermilk
- 1/2 c. molasses
- 2 1/2 tsp. baking soda
- 1/2 tsp. salt
Method
- Pour boiling water over Bran Buds.
- In large mixing bowl add vegetable oil, sugar and eggs; beat together until sugar is dissolved.
- Add unprocessed bran, 2 cups flour, soaked Bran Buds, buttermilk, molasses, baking soda and salt.
- Mix well.
- Bake in muffin tins at 375° for 25 minutes.
- Batter can be kept in covered container in refrigerator for up to 6 weeks.
