Ingredients
- 3 eggs
- 2 c. sugar
- 1 1/2 c. oil
- 3 c. flour
- 2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 c. grated carrots
- 1 c. chopped nuts
- 1 can crushed pineapple, drained
- 2 tsp. vanilla
Method
- Combine eggs, sugar and oil in a large mixing bowl and beat well.
- Gradually beat in flour, soda, salt and cinnamon.
- Stir in carrots, nuts, pineapple and vanilla.
- Pour into a greased and floured 10-inch tube pan.
- Bake at 350° for 1 hour and 15 minutes or until cake tests done.
