Ingredients

  • 1 (6 oz.) pkg. Uncle Ben's original long grain wild rice
  • 1/4 c. butter or margarine
  • 1/3 c. chopped onion
  • 1/3 c. flour
  • 1 tsp. salt
  • dash of black pepper
  • 1 c. half and half
  • 1 c. chicken broth
  • 2 c. cubed cooked chicken or turkey
  • 1/3 c. diced pimento
  • 1/3 c. chopped fresh parsley
  • 1/4 c. chopped slivered almonds

Method

  • Cook contents or rice and seasoning packets according to package directions.
  • While rice is cooking, melt butter in a large saucepan.
  • Add onion and cook over low heat until tender.
  • Stir in flour, salt and pepper.
  • Gradually stir in half and half and chicken broth.
  • Cook, stirring constantly, until thickened.
  • Stir in chicken, pimento, parsley, almonds and cooked rice.
  • Pour into a greased 2-quart casserole.
  • Bake uncovered in a 400° oven for 30 minutes.
  • Makes 6 to 8 servings.
