Ingredients

  • 2 Tbsp. butter or margarine
  • 1 small onion, diced
  • 1 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 3/4 c. half and half
  • 2 c. cubed cooked potatoes
  • 2 c. cubed cooked chicken or turkey
  • chopped parsley (garnish)

Method

  • In a 10-inch skillet over medium heat, in hot butter or margarine, cook onion until tender, about 5 minutes, stirring occasionally.
  • Stir in flour and salt.
  • Gradually stir in half and half; cook, stirring, until thickened.
  • Stir potatoes and chicken into mixture.
  • Reduce heat to low.
  • Cover skillet and simmer about 10 minutes, or until mixture is heated through, stirring occasionally.
  • Garnish with parsley.
  • Serves 4.
