Ingredients
- 2 Tbsp. butter or margarine
- 1 small onion, diced
- 1 Tbsp. all-purpose flour
- 1 tsp. salt
- 3/4 c. half and half
- 2 c. cubed cooked potatoes
- 2 c. cubed cooked chicken or turkey
- chopped parsley (garnish)
Method
- In a 10-inch skillet over medium heat, in hot butter or margarine, cook onion until tender, about 5 minutes, stirring occasionally.
- Stir in flour and salt.
- Gradually stir in half and half; cook, stirring, until thickened.
- Stir potatoes and chicken into mixture.
- Reduce heat to low.
- Cover skillet and simmer about 10 minutes, or until mixture is heated through, stirring occasionally.
- Garnish with parsley.
- Serves 4.
