Ingredients

  • 2 (10 oz.) pkg. frozen spinach
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, mashed
  • 2 Tbsp. all purpose flour
  • 3/4 c. Half and Half cream
  • 1/4 tsp. powdered nutmeg
  • 1 c. freshly grated Parmesan cheese
  • salt and pepper to taste

Method

  • Prepare spinach according to directions. Combine oil and butter in a wide frying pan and cook over medium heat. When butter is melted, add onions and garlic; cook, stirring until onions are soft. Stir in flour, blending well. Remove from heat and blend in half and half cream and nutmeg. Add drained spinach and return to high heat, stirring until bubbly. Remove from heat and mix 1/2 c. Parmesan cheese, salt and pepper; stir. Sprinkle with remaining cheese and serve hot.
