Ingredients

  • cooking spray
  • 12 cup chopped onion
  • 1 medium potato, peeled and cubed
  • 2 garlic cloves, minced
  • 1 (15 ounce) can whole corn, drained
  • 3 tablespoons flour
  • 12 teaspoon ground coriander
  • 18 teaspoon cayenne pepper
  • 2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans chicken broth
  • 1 cup milk
  • 2 medium tomatoes, chopped
  • salt and pepper
  • paprika (to garnish)

Method

  • Spray large saucepan with cooking spray.
  • Saute onion, potato and garlic until onion is tender, about 5 minutes.
  • Stir in corn, flour, coriander and cayenne; cook 1-2 minutes, stirring frequently.
  • Stir in broth and heat to boiling.
  • Reduce heat and simmer, covered, until potato is tender, about 10 minutes.
  • Process mixture in food processor or blender until almost smooth; return to saucepan.
  • Stir in milk and tomatoes; heat just to boiling.
  • Reduce heat and simmer, uncovered, 5 minutes.
  • Season to taste with salt and pepper.
  • Serve in bowls, sprinkled with paprika.
