- cooking spray
- 12 cup chopped onion
- 1 medium potato, peeled and cubed
- 2 garlic cloves, minced
- 1 (15 ounce) can whole corn, drained
- 3 tablespoons flour
- 12 teaspoon ground coriander
- 18 teaspoon cayenne pepper
- 2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans chicken broth
- 1 cup milk
- 2 medium tomatoes, chopped
- salt and pepper
- paprika (to garnish)
Method
- Spray large saucepan with cooking spray.
- Saute onion, potato and garlic until onion is tender, about 5 minutes.
- Stir in corn, flour, coriander and cayenne; cook 1-2 minutes, stirring frequently.
- Stir in broth and heat to boiling.
- Reduce heat and simmer, covered, until potato is tender, about 10 minutes.
- Process mixture in food processor or blender until almost smooth; return to saucepan.
- Stir in milk and tomatoes; heat just to boiling.
- Reduce heat and simmer, uncovered, 5 minutes.
- Season to taste with salt and pepper.
- Serve in bowls, sprinkled with paprika.
