Ingredients

  • 3 Tbsp. oil
  • 1/4 lb. snow peas
  • 2 c. chopped celery
  • 1 c. sliced mushrooms
  • 4 chopped green onions
  • 1 tsp. cornstarch
  • 1/2 tsp. salt
  • 1/4 tsp. ginger
  • 1/8 tsp. white pepper
  • 3 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp. soy sauce

Method

  • Add tablespoon oil to wok; heat on medium high.
  • Add snow peas, mushrooms and onions; stir-fry 2 minutes.
  • Remove from wok and set aside.
  • In small cup, mix the cornstarch, salt, ginger and pepper; set aside.
  • Add remaining 2 tablespoons oil to wok.
  • Add chicken and cornstarch mixture; stir-fry until chicken turns white.
  • Stir in snow pea mixture and soy sauce; stir-fry 3 minutes.
  • Makes 3 to 4 servings.
