Ingredients
- 18 vanilla wafer cookies
- 1 lb. cream cheese, room temperature
- 1/2 c. sugar
- 3 eggs, room temperature
- 1 tsp. vanilla
- 1 can fruit filling (cherry, pineapple or blueberry)
Method
- Mix cheese, 1 egg and sugar.
- Add other 2 eggs and vanilla. Mix until smooth.
- Put cupcake papers in a muffin tin.
- Place 1 vanilla wafer in the bottom of each cupcake paper.
- Pour batter in each about 3/4 full.
- Bake 15 minutes at 350°.
- Do not brown. Allow to cool, then add topping and chill.
- Makes 18.
