Ingredients

  • 2 c. mashed sweet potatoes
  • 1/4 tsp. salt
  • 4 tsp. butter or margarine
  • 1 c. milk
  • 1/2 c. self-rising flour
  • 1 Tbsp. sugar
  • 2 eggs, separated

Method

  • Combine potatoes, butter, sugar, milk and egg yolks.
  • Beat until smooth.
  • Sift flour and measure.
  • Add to the first mixture. Beat egg whites until stiff and fold in beaten egg whites.
  • Drop by teaspoon into deep-fat (365°).
  • Fry until brown.
  • Drain on absorbent paper towels.
  • Sprinkle with powdered sugar.
  • Makes 10 servings.
