Ingredients
- 2 c. mashed sweet potatoes
- 1/4 tsp. salt
- 4 tsp. butter or margarine
- 1 c. milk
- 1/2 c. self-rising flour
- 1 Tbsp. sugar
- 2 eggs, separated
Method
- Combine potatoes, butter, sugar, milk and egg yolks.
- Beat until smooth.
- Sift flour and measure.
- Add to the first mixture. Beat egg whites until stiff and fold in beaten egg whites.
- Drop by teaspoon into deep-fat (365°).
- Fry until brown.
- Drain on absorbent paper towels.
- Sprinkle with powdered sugar.
- Makes 10 servings.
