Ingredients
- 8 oz. cream cheese
- 4 eggs
- sugar
- vanilla
- 1 to 2 c. pecans, coarsely chopped
- 1 c. light corn syrup
- 1/4 tsp. salt
- unbaked 10-inch pastry shell
Method
- In a large bowl, mix at medium speed, beat together until smooth the cream cheese, 1 egg, 1/3 cup sugar and 1 teaspoon vanilla.
- Spread over the bottom of the pastry shell.
- Sprinkle with the pecans.
- In a large clean bowl, beat 3 eggs on medium speed until frothy.
- Add the corn syrup, 1/4 cup sugar, salt and 1 teaspoon vanilla.
- Beat until blended.
- Gently pour the mixture over the pecans.
- Bake in a preheated 375° oven until a knife inserted halfway between the center and edge comes out clean, 40 minutes.
- Cool on a wire rack before cutting.
