Ingredients

  • 8 oz. cream cheese
  • 4 eggs
  • sugar
  • vanilla
  • 1 to 2 c. pecans, coarsely chopped
  • 1 c. light corn syrup
  • 1/4 tsp. salt
  • unbaked 10-inch pastry shell

Method

  • In a large bowl, mix at medium speed, beat together until smooth the cream cheese, 1 egg, 1/3 cup sugar and 1 teaspoon vanilla.
  • Spread over the bottom of the pastry shell.
  • Sprinkle with the pecans.
  • In a large clean bowl, beat 3 eggs on medium speed until frothy.
  • Add the corn syrup, 1/4 cup sugar, salt and 1 teaspoon vanilla.
  • Beat until blended.
  • Gently pour the mixture over the pecans.
  • Bake in a preheated 375° oven until a knife inserted halfway between the center and edge comes out clean, 40 minutes.
  • Cool on a wire rack before cutting.
