Ingredients

  • 1 c. chopped onions
  • 1 c. chopped green peppers
  • 1 c. chopped celery
  • 2 cloves garlic
  • 1 stick butter or oleo
  • 1 can cream of mushroom soup or cream of shrimp
  • 1 can Cheddar cheese soup
  • 3 c. cooked shrimp or crawfish
  • 2 c. cooked rice
  • 1/4 c. bread crumbs
  • 1/3 c. chopped parsley
  • 1 c. chopped green onions
  • 1/2 Tbsp. hot sauce
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 1 can pimento and juice

Method

  • Cook onions,
  • peppers, garlic and celery in oleo until tender.
  • Add
  • soups, parsley, green onions, shrimp and chopped pimento.
  • Heat
  • thoroughly;
  • stir
  • in
  • rice
  • and bread crumbs. Turn into a three quart casserole. Sprinkle bread crumbs over casserole and bake at 350° for over 30 minutes.
