Ingredients

  • 1 c. chopped cranberries
  • 1/2 c. chopped walnuts
  • 1 orange
  • 1 egg
  • 2 Tbsp. liquid shortening
  • buttermilk
  • 2 c. flour
  • 1 c. sugar
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder

Method

  • Blend dry ingredients in a large bowl.
  • Grate rind from orange and add to flour mixture.
  • In separate bowl, squeeze juice from orange and add shortening.
  • Add buttermilk to make 3/4 cup of liquid. Beat egg and add to liquid.
  • Pour over flour.
  • Add cranberries and nuts and stir until blended.
  • Bake at 325° for 1 hour.
  • Let stand 15 minutes and remove from pan.
