Ingredients
- 1 c. chopped cranberries
- 1/2 c. chopped walnuts
- 1 orange
- 1 egg
- 2 Tbsp. liquid shortening
- buttermilk
- 2 c. flour
- 1 c. sugar
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
Method
- Blend dry ingredients in a large bowl.
- Grate rind from orange and add to flour mixture.
- In separate bowl, squeeze juice from orange and add shortening.
- Add buttermilk to make 3/4 cup of liquid. Beat egg and add to liquid.
- Pour over flour.
- Add cranberries and nuts and stir until blended.
- Bake at 325° for 1 hour.
- Let stand 15 minutes and remove from pan.
