Ingredients

  • 1 c. whole-wheat flour
  • 1 c. white flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 2 tsp. grated orange rind
  • 1 c. orange juice
  • 2 Tbsp. vegetable oil
  • 1 egg
  • 1 c. chopped fresh or frozen cranberries
  • 1/3 c. raisins
  • 1/3 c. chopped walnuts

Method

  • Combine the flours, sugar, baking powder and orange rind in a mixing bowl.
  • Add the remaining ingredients and stir until well blended.
  • Pour into an oiled 9 x 5-inch loaf pan.
  • Bake in a 350° oven for 45 to 50 minutes.
  • Cool for 5 to 7 minutes before removing from pan.
  • Turn onto a wire rack and cool thoroughly.
  • Store in a plastic bag or aluminum foil for at least 1 day before slicing. Serves 15.
