- 1 c. whole-wheat flour
- 1 c. white flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 2 tsp. grated orange rind
- 1 c. orange juice
- 2 Tbsp. vegetable oil
- 1 egg
- 1 c. chopped fresh or frozen cranberries
- 1/3 c. raisins
- 1/3 c. chopped walnuts
Method
- Combine the flours, sugar, baking powder and orange rind in a mixing bowl.
- Add the remaining ingredients and stir until well blended.
- Pour into an oiled 9 x 5-inch loaf pan.
- Bake in a 350° oven for 45 to 50 minutes.
- Cool for 5 to 7 minutes before removing from pan.
- Turn onto a wire rack and cool thoroughly.
- Store in a plastic bag or aluminum foil for at least 1 day before slicing. Serves 15.
