- grated rind of 1 lemon
- grated rind of 1 orange
- 3 Tbsp. lemon juice
- 2 Tbsp. shortening, melted
- orange juice
- 2 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/4 c. sugar
- 1 tsp. nutmeg
- 1 egg, beaten
- 1 tsp. vanilla
- 1/2 tsp. almond extract
- 1 c. chopped nuts
- 1 c. halved berries
Method
- Mix together first 4 ingredients; add orange juice to equal 3/4 cup liquid.
- Sift dry ingredients together.
- Add orange juice mixture, egg, vanilla and almond extract; stir only until moist. Fold in nuts and cranberries.
- Spoon batter into a loaf pan lined with greased paper.
- Bake at 350° for 1 hour to 1 hour and 10 minutes.
- Cool, cut into thin slices.
- Can be made ahead and wrapped in foil, then put in freezer.
