Ingredients

  • grated rind of 1 lemon
  • grated rind of 1 orange
  • 3 Tbsp. lemon juice
  • 2 Tbsp. shortening, melted
  • orange juice
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/4 c. sugar
  • 1 tsp. nutmeg
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1/2 tsp. almond extract
  • 1 c. chopped nuts
  • 1 c. halved berries

Method

  • Mix together first 4 ingredients; add orange juice to equal 3/4 cup liquid.
  • Sift dry ingredients together.
  • Add orange juice mixture, egg, vanilla and almond extract; stir only until moist. Fold in nuts and cranberries.
  • Spoon batter into a loaf pan lined with greased paper.
  • Bake at 350° for 1 hour to 1 hour and 10 minutes.
  • Cool, cut into thin slices.
  • Can be made ahead and wrapped in foil, then put in freezer.
