Ingredients

  • 1 lb. ground beef
  • 3 Tbsp. shortening
  • 1 clove garlic
  • 2 1/2 tsp. salt
  • 1 1/4 c. minced onion
  • 1/2 c. minced green pepper
  • 1 tsp. chili powder
  • 20 oz. can tomatoes
  • 1/2 c. uncooked rice
  • 20 oz. kidney beans

Method

  • Cook ground beef in fat until lightly browned.
  • On cutting board, thinly slice garlic.
  • Sprinkle with salt and mash thoroughly to pulp.
  • Add to beef with onion, green pepper and chili powder.
  • Cook 5 minutes.
  • Remove from heat and add tomatoes. Combine rice and kidney beans in 2-quart casserole.
  • Add hot beef mixture.
  • Bake, uncovered, for 1 hour in a 350° oven.
