Ingredients

  • 1 1/4 cups fat-free, less-sodium chicken broth
  • 1 (5.8-ounce) package olive oil and garlic-flavored couscous
  • 1/3 cup diced carrot
  • 1/3 cup diced radishes
  • 1/3 cup currants
  • 1/3 cup chopped peanuts
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup fat-free balsamic vinaigrette

Method

  • Bring broth to a boil. Stir in couscous and flavoring packet. Remove from heat; cover and let stand 5 minutes.
  • Add carrot and remaining ingredients to couscous; toss well. Serve immediately or chill thoroughly.
