- 1 1/4 cups fat-free, less-sodium chicken broth
- 1 (5.8-ounce) package olive oil and garlic-flavored couscous
- 1/3 cup diced carrot
- 1/3 cup diced radishes
- 1/3 cup currants
- 1/3 cup chopped peanuts
- 1/3 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup fat-free balsamic vinaigrette
Method
- Bring broth to a boil. Stir in couscous and flavoring packet. Remove from heat; cover and let stand 5 minutes.
- Add carrot and remaining ingredients to couscous; toss well. Serve immediately or chill thoroughly.
