Ingredients

  • 3 or 4 Cornish hens (I also use chicken pieces)
  • 1 1/4 c. raw rice (a mix is good)
  • 1 c. or can chicken broth
  • 1 can mushroom soup
  • dry onion soup mix
  • extra mushrooms can be added

Method

  • Place raw rice in greased 9 x 13-inch cake pan.
  • Cover with chicken broth.
  • Cut hens in half (or the chicken pieces).
  • Shake in the dry onion soup mix and lay on rice mixture.
  • Pour 1 can mushroom soup mixed with 1 cup hot water over the chicken.
  • Bake at 350° for 1/2 hour uncovered, 1 hour covered, 10 more minutes uncovered.
