Ingredients
- 3 or 4 Cornish hens (I also use chicken pieces)
- 1 1/4 c. raw rice (a mix is good)
- 1 c. or can chicken broth
- 1 can mushroom soup
- dry onion soup mix
- extra mushrooms can be added
Method
- Place raw rice in greased 9 x 13-inch cake pan.
- Cover with chicken broth.
- Cut hens in half (or the chicken pieces).
- Shake in the dry onion soup mix and lay on rice mixture.
- Pour 1 can mushroom soup mixed with 1 cup hot water over the chicken.
- Bake at 350° for 1/2 hour uncovered, 1 hour covered, 10 more minutes uncovered.
