Ingredients
- 2 cups frozen or canned corn, thawed and/or drained
- 4 ounces canned pimento, diced
- 1 (4-ounce) can diced green chiles
- 1 teaspoon ground cumin
- Salt and ground black pepper
- 1 tablespoon chopped parsley leaves
Method
- In a medium bowl, combine corn, pimento, green chiles, and cumin.
- Mix well and season to taste with salt and black pepper.
- Garnish with fresh parsley.
