Ingredients

  • 3 c. rigatoni noodles
  • 1 lb. ground beef
  • 1/2 chopped onion (medium)
  • 1/2 c. green pepper, chopped
  • 1/2 tsp. garlic (fresh, salt or powder)
  • 1 (3 oz.) can tomato paste
  • 1 qt. spaghetti sauce
  • 1/2 tsp. sugar
  • 1/2 tsp. oregano
  • 2 eggs
  • 2 Tbsp. butter, melted
  • 1/3 c. Parmesan cheese

Method

  • Precook rigatoni.
  • Brown meat with onion, green pepper and garlic.
  • Drain off fat.
  • Add tomato paste, spaghetti sauce, sugar and oregano.
  • Heat thoroughly (mixture will thicken).
  • Grease 9-inch pie pan well.
  • Beat eggs; add melted butter and Parmesan cheese.
  • Mix well.
  • Pour pasta (cooked, drained and cooled) into pie pan.
  • Pour egg mixture over and mix in thoroughly.
  • Pour sauce mixture over all.
  • Bake 20 minutes at 350°.
  • Sprinkle Parmesan cheese over top and serve.
