Ingredients

  • 1 1/4 c. yellow cornmeal
  • 3/4 c. all-purpose flour
  • 1 1/3 Tbsp. sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. plus 2 Tbsp. low-fat Buttermilk
  • 1 med. egg

Method

  • Preheat oven to 400°: spray 8 inch square, 7x11, or 12 cup muffin tin with nonstick cooking spray.
  • In a large bowl, combine the cornmeal, flour, sugar, baking powder, and the salt.
  • In a small bowl, beat the buttermilk over the flour mixture; stir just until blended (do not overmix).
  • Transfer to the pan.
  • Bake until golden brown and a toothpick inserted into the center comes out clean, 20-25 minutes.
  • Cool pan on a rack 10 minutes; serve warm. Makes 12 servings.
