Ingredients
- 1 1/4 c. yellow cornmeal
- 3/4 c. all-purpose flour
- 1 1/3 Tbsp. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. plus 2 Tbsp. low-fat Buttermilk
- 1 med. egg
Method
- Preheat oven to 400°: spray 8 inch square, 7x11, or 12 cup muffin tin with nonstick cooking spray.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and the salt.
- In a small bowl, beat the buttermilk over the flour mixture; stir just until blended (do not overmix).
- Transfer to the pan.
- Bake until golden brown and a toothpick inserted into the center comes out clean, 20-25 minutes.
- Cool pan on a rack 10 minutes; serve warm. Makes 12 servings.
