- 4 large pork chops or 6 chicken thighs (can substitute wings, breasts or other)
- 1 lb. smoked sausage, sliced
- 2 to 3 Tbsp. cooking oil
- 1 Tbsp. flour
- 1 large onion, chopped
- 1 bell pepper, chopped
- 4 c. water
- 2 c. long grain rice
- 2 Tbsp. Cajun seasoning salt
- Cajun salt to season meat
- 1 rib celery, chopped
- 2 cloves garlic (optional)
Method
- Season meat generously.
- In a 4 to 5 quart heavy pot, heat oil.
- Brown meat on all sides and remove.
- Meat can be cut from bone or cut into smaller servings if desired.
