Ingredients

  • 4 large pork chops or 6 chicken thighs (can substitute wings, breasts or other)
  • 1 lb. smoked sausage, sliced
  • 2 to 3 Tbsp. cooking oil
  • 1 Tbsp. flour
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 4 c. water
  • 2 c. long grain rice
  • 2 Tbsp. Cajun seasoning salt
  • Cajun salt to season meat
  • 1 rib celery, chopped
  • 2 cloves garlic (optional)

Method

  • Season meat generously.
  • In a 4 to 5 quart heavy pot, heat oil.
  • Brown meat on all sides and remove.
  • Meat can be cut from bone or cut into smaller servings if desired.
