Ingredients

  • 175 grams extra course wholemeal
  • 50 grams plain flour
  • 25 grams bran
  • 25 grams pinhead oatmeal
  • 25 grams wheatgerm
  • 1 tsp sugar
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 275 ml buttermilk
  • 1 egg

Method

  • Mix all dry ingredients in a bowl with a wooden spoon.
  • Beat the egg in with the buttermilk and add to dry ingredients mixing well.
  • Place dough into a 2lb tin lined with parchment paper... creating a slight hollow down the centre of the wet mix.
  • Bake in pre heated oven at 190c for 40 minutes.. (test with skewer.. if dough sticks to skewer.. cook more), and turn out onto a wire rack to cool.
