Ingredients

  • 2 1/2 c. all-purpose flour
  • 1/2 c. toasted wheat germ
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 1 1/2 c. granulated sugar
  • 1/2 c. vegetable oil
  • 2 large eggs
  • 1 1/2 c. canned pumpkin
  • 1/4 c. milk
  • 6 oz. semi-sweet chocolate chips (if desired, for extra flavor!)

Method

  • Heat oven to 350°.
  • Grease a 9 x 5 x 3-inch loaf pan.
  • Put all ingredients in a large bowl; mix with electric mixer or by hand. After thorough mixing, spread batter in prepared pan.
  • Bake for 60 to 65 minutes, or until wooden toothpick inserted in center comes out clean.
  • Remove pan from oven; place on wire rack to cool for 10 minutes.
  • Remove loaf from pan; cool completely on wire rack. Tightly wrapped in aluminum foil, loaf keeps well in refrigerator or freezer.
  • Makes 1 loaf.
