Ingredients

  • 4 chicken breasts, cooked and diced
  • 3/4 cup mayonnaise
  • 1/2 cup water chestnuts, sliced
  • 2 tablespoons wine vinegar
  • 1/2 cup chopped pecans
  • 1 tablespoon soy sauce
  • 1/2 cup seedless grapes
  • 2 teaspoons minced onion
  • 1 1/4 cup chopped celery
  • 1/2 teaspoon curry powder
  • 1 teaspoon minced candied ginger
  • 6 slices canned pineapple

Method

  • Mix first six ingredients together.
  • Mix mayo with remaining ingredients (except pineapple).
  • Toss with chicken mixture, chill and serve over pineapple arranged over lettuce leaves.
