Ingredients

  • 6 eggs separated
  • 1/2 cup margarine
  • 1 cup crisco
  • 3 cups sugar
  • 3 cups cake flour
  • 1 cup milk
  • 2 cans flake coconut
  • 1 Tbsp. vanilla

Method

  • Separate eggs.
  • Put whites in large bowl until room temperature (1 hour).
  • Preheat oven to 300 degrees.
  • Grease 10 inch tube pan.
  • Beat at high speed, yolks with crisco and margarine.
  • Gradually add sugar, beat until light and fluffy.
  • At low speed beat in flour alternately with milk, ending with flour; add coconut.
  • Beat until well blended.
  • Beat egg whites just until stiff peaks form.
  • Fold into batter until well blended.
  • Bake at 300 degrees for 2 hours or until toothpick comes out clean.
  • Cool in pan 15 minutes.
