Ingredients
- 3 c. oats, rolled
- 3 c. milk (soy or nut)
- 1 c. coconut (fine)
- 1 c. cooked cornmeal
- 1/2 tsp. salt
- 2 Tbsp. oil
- 1 Tbsp. honey
- 1/2 tsp. grated orange rind
Method
- Blend cornmeal with milk and coconut.
- Stir in remaining ingredients with spoon.
- Let sit 1 hour or more in refrigerator. Bake on piping hot ungreased waffle iron until done.
