Ingredients

  • tofu
  • collards /kale/bok choy/ other green
  • 1/2 onion
  • 2 cans coconut milk
  • soy sauce
  • 1 cup lemon juice

Method

  • chop up some firm tofu (you can probably substitute meat but then presumably need to cook it long enough for it to be done)
  • chop up some collards/kale/bok choy/ other green that can handle some cooking
  • chop up half an onion
  • toss it all into a pot with a can or two of coconut milk.
  • add chili powder and some soy sauce or salt
  • cook till greens are almost done and onions are soft (about 10 min)
  • add a *lot* of lemon juice. Like at least a cup. Figure how much you want by taste - the final product should be something that approximates a lemongrassy taste
  • cook till greens and onions are as soft as you like them to be.
  • serve with rice or on its own
