- 4 c. tomato juice
- 2 Tbsp. olive oil
- 5 drops Tabasco sauce
- 2 Tbsp. red wine vinegar
- 1/4 tsp. basil
- 1/2 tsp chervil
- 1 tsp. salt
- pepper, freshly ground
- 1 c. celery, finely chopped
- 2 Tbsp. onion, finely chopped
- 2 Tbsp. bell pepper, finely chopped
Method
- Combine all ingredients except chopped vegetables.
- Simmer for 20 minutes.
- Just before serving add vegetables.
- Plain or garlic croutons may be sprinkled on top when served.
- Serve icy cold in hot weather - or hot in cool weather!
