Ingredients

  • 4 c. tomato juice
  • 2 Tbsp. olive oil
  • 5 drops Tabasco sauce
  • 2 Tbsp. red wine vinegar
  • 1/4 tsp. basil
  • 1/2 tsp chervil
  • 1 tsp. salt
  • pepper, freshly ground
  • 1 c. celery, finely chopped
  • 2 Tbsp. onion, finely chopped
  • 2 Tbsp. bell pepper, finely chopped

Method

  • Combine all ingredients except chopped vegetables.
  • Simmer for 20 minutes.
  • Just before serving add vegetables.
  • Plain or garlic croutons may be sprinkled on top when served.
  • Serve icy cold in hot weather - or hot in cool weather!
