Ingredients

  • 1/2 pound bacon
  • 2 pounds tomatoes, preferably dry farmed, quartered
  • 2 cloves garlic, slightly crushed
  • 1/2 loaf day old sour dough boule, Crust removed and torn into chunks
  • 6 cups Lettuce of choice
  • 1 Tablespoon Red Wine Vinegar
  • 1/3 cup plus 3 Tablespoons Olive Oil, divided
  • Sea Salt and Pepper

Method

  • Cut Bacon into 2 inch pieces and fry to desired crispness.
  • In a 2nd frying pan heat 1/3 cup olive oil with the garlic cloves.
  • When oil is hot fry the bread in batches till crispy and browned.
  • Toss the bacon, fried bread, quartered tomatoes and lettuce together in a serving bowl, sprinkle with 1 Tablespoon vinegar and enough olive oil to lightly coat.
  • Season with salt and pepper.
