Ingredients
- 1/2 pound bacon
- 2 pounds tomatoes, preferably dry farmed, quartered
- 2 cloves garlic, slightly crushed
- 1/2 loaf day old sour dough boule, Crust removed and torn into chunks
- 6 cups Lettuce of choice
- 1 Tablespoon Red Wine Vinegar
- 1/3 cup plus 3 Tablespoons Olive Oil, divided
- Sea Salt and Pepper
Method
- Cut Bacon into 2 inch pieces and fry to desired crispness.
- In a 2nd frying pan heat 1/3 cup olive oil with the garlic cloves.
- When oil is hot fry the bread in batches till crispy and browned.
- Toss the bacon, fried bread, quartered tomatoes and lettuce together in a serving bowl, sprinkle with 1 Tablespoon vinegar and enough olive oil to lightly coat.
- Season with salt and pepper.
