- 3/4 c. uncooked brown rice
- 1/2 c. dry lentils, rinsed
- 1/2 c. onions, chopped
- 1/2 c. celery, chopped
- 1/2 c. carrots, chopped
- 1/4 c. snipped parsley
- 1 tsp. Italian seasoning
- 1 clove garlic, minced
- 1 bay leaf
- 2 1/2 c. chicken broth
- 1 (14 oz.) can tomatoes, chopped
- 1 Tbsp. vinegar
Method
- Combine all with 2 cups water and cook uncovered for 1 hour.
