Ingredients

  • 2 eggs, well beaten
  • 2 c. sugar
  • 1 c. oil
  • 2 tsp. vanilla
  • 2 Tbsp. lemon juice
  • 1 Tbsp. grated lemon rind
  • 1 tsp. salt
  • 3 c. sifted flour
  • 1 1/4 tsp. baking soda
  • dash of cinnamon
  • 3 c. peeled, chopped apples
  • 1 to 2 c. chopped nuts

Method

  • In a bowl, beat eggs.
  • Add sugar, oil, vanilla, lemon juice, lemon rind and salt.
  • Gradually beat in sifted flour, baking soda and cinnamon (mixture will be very thick).
  • Stir in the apples and nuts.
  • Pour into a greased and floured tube pan (10-inch size). Bake at 325° for 1 1/2 hours.
  • Before serving, sprinkle with powdered sugar.
