Ingredients
- 1/2 c. warm water
- 2 pkg. dry yeast
- 1 1/2 c. lukewarm milk, don't scald
- 2 tsp. salt
- 2 eggs
- 1/2 c. shortening
- 7 to 7 1/2 c. flour, sifted
- melted butter
- 1/2 c. sugar
- 2 to 2 1/2 tsp. cinnamon
Method
- Add yeast, milk and sugar to warm water in mixing bowl.
- Stir to dissolve.
- Add salt, eggs, shortening and half of flour.
- For light, flakey buns, keep dough soft as possible, almost sticky, just so you are able to handle it.
- Mix with wooden spoon until smooth.
- Add enough remaining flour to handle easily.
- Mix with hands.
- Turn out on board and knead 5 minutes.
- Round up in well-greased or oiled bowl.
- Turn so greased side is up.
- Cover with damp towel.
- Let rise until almost double, 1 1/2 hours.
- Punch down and let rise again, 30 minutes.
- Roll out dough a portion at a time 3/8-inch thick.
- Brush with melted butter.
- Sprinkle with cinnamon/sugar mix.
- Roll jelly roll fashion and slice.
- Place in ungreased pans close together.
- Bake at 375° for 20 minutes.
