Ingredients

  • 1/2 c. warm water
  • 2 pkg. dry yeast
  • 1 1/2 c. lukewarm milk, don't scald
  • 2 tsp. salt
  • 2 eggs
  • 1/2 c. shortening
  • 7 to 7 1/2 c. flour, sifted
  • melted butter
  • 1/2 c. sugar
  • 2 to 2 1/2 tsp. cinnamon

Method

  • Add yeast, milk and sugar to warm water in mixing bowl.
  • Stir to dissolve.
  • Add salt, eggs, shortening and half of flour.
  • For light, flakey buns, keep dough soft as possible, almost sticky, just so you are able to handle it.
  • Mix with wooden spoon until smooth.
  • Add enough remaining flour to handle easily.
  • Mix with hands.
  • Turn out on board and knead 5 minutes.
  • Round up in well-greased or oiled bowl.
  • Turn so greased side is up.
  • Cover with damp towel.
  • Let rise until almost double, 1 1/2 hours.
  • Punch down and let rise again, 30 minutes.
  • Roll out dough a portion at a time 3/8-inch thick.
  • Brush with melted butter.
  • Sprinkle with cinnamon/sugar mix.
  • Roll jelly roll fashion and slice.
  • Place in ungreased pans close together.
  • Bake at 375° for 20 minutes.
