Ingredients

  • 1 cup White Whole Wheat Flour
  • 1/2 cups Rolled Oats
  • 1-1/2 teaspoon Baking Powder
  • 1/2 teaspoons Sea Salt
  • 2 teaspoons Cinnamon
  • 1 whole Banana, Mashed
  • 3/4 cups Brown Sugar
  • 1 whole Egg
  • 1 teaspoon Almond Extract
  • 1 Tablespoon Honey
  • 3/4 cups Milk
  • 1 cup Apples, Chopped
  • FOR THE CRUMB TOPPING:
  • 1/4 cups White Whole Wheat Flour
  • 1/4 cups Oats
  • 3 Tablespoons Brown Sugar
  • 1 Tablespoon Cinnamon

Method

  • Preheat oven to 350°F. Spray standard muffin tins with cooking spray.
  • In a bowl, mix flour, oats, baking powder, salt, and cinnamon. Set aside.
  • In another bowl, mix all ingredients for crumb topping and set aside.
  • In a mixer, cream banana and sugar. Add in egg, almond extract, honey, and milk. Combine well. Fold in dry ingredients. Mix until combined. Gently fold in apples.
  • Pour into muffin tins, filling 3/4 full. Sprinkle the top of batter with crumb topping mix.
  • Bake 18-22 minutes until an inserted toothpick comes out clean.
