Ingredients

  • 1/2 pounds Chicken Sausage, Removed From Casings
  • 6 whole Eggs
  • 1/2 cups Nonfat Milk (or Milk Of Your Choosing)
  • 1/2 teaspoons Black Pepper
  • 1/2 cups Green Onions, Chopped
  • 3 cups Mixed Baby Greens (or Spinach, Kale, Or Whatever You Have On Hand)
  • 1/2 cups Parmesan Cheese, Grated

Method

  • Preheat oven to 425°F.
  • In a large cast iron skillet, brown chicken sausage. Drain if needed.
  • Meanwhile, in a bowl combine eggs, milk, black pepper, and green onions.
  • Toss greens into skillet with chicken sausage and let them wilt, about 1-2 minutes. Pour on egg mixture, and sprinkle with cheese.
  • Bake 15 minutes or until eggs are set. Enjoy.
