Ingredients

  • 1 pound Chorizo, Ground
  • 1 cup Onion, Chopped
  • 1 pound Velveeta
  • 1 can (10 Oz. Size) Rotel Tomatoes With Green Chilies
  • 2 cloves Garlic, Finely Chopped
  • 1 whole Jalapeno, Seeded And Finely Chopped
  • 1/4 cups Milk
  • 1/4 cups Light Sour Cream
  • Cilantro, To Garnish

Method

  • In medium saucepan, cook the chorizo and onions.
  • Remove when chorizo is nice and brown.
  • In a large crock pot on high heat, add cheese, Rotel tomatoes, garlic, and jalapeno.
  • Add the chorizo and stir.
  • Let the mixture sit for 58 minutes.
  • Stir and add the milk and sour cream.
  • Let it stand for another 58 minutes.
  • Stir one last time; cheese should be melted by now.
  • Serve and garnish with cilantro.
