Ingredients

  • Mashed Sweet Potatoes
  • 1-3/4 gal. sweet potatoes, cooked
  • - Philadelphia Brick Cream Cheese, softened
  • 1/2 cup half-and-half
  • 2-1/2 Tbsp. canned chipotle peppers in adobo sauce, chopped
  • 1-1/2 tsp. salt
  • BBQ Chicken
  • 3 qt. pulled cooked chicken
  • 3 cups Kraft BarBQ Sauce
  • Spicy Coleslaw
  • 1-1/2 qt. coleslaw blend (cabbage slaw mix)
  • 1/2 cup fresh cilantro, chopped
  • 6 Tbsp. poblano chiles, roasted, diced
  • 6 Tbsp. red onions, julienned
  • 1/2 cup Kraft Mayo Real Mayonnaise
  • 1-1/2 Tbsp. fresh lime juice Safeway 3 ct For $1.00 thru 02/09
  • 1 Tbsp. country-style Dijon mustard
  • 1-1/2 tsp. salt
  • 1-1/2 tsp. cracked black pepper

Method

  • Mashed Sweet Potatoes: Mash potatoes with cream cheese and half-and-half until smooth.
  • Stir in chipotle peppers and salt.
  • Keep warm.
  • BBQ Chicken: Cook ingredients in saucepan on medium heat until heated through, stirring occasionally.
  • Keep warm.
  • Spicy Coleslaw: Combine coleslaw blend, cilantro, poblano peppers and onions in large bowl.
  • Mix mayonnaise, lime juice, mustard, salt and pepper.
  • Add to coleslaw mixture; toss to coat.
  • Refrigerate until ready to use.
  • For each serving: Spoon 3/4 cup (175 mL) Mashed Sweet Potatoes into serving bowl; top with 1/2 cup (125 mL) BBQ Chicken and 1/4 cup (60 mL) Spicy Coleslaw.
