Ingredients

  • 8 eggs (room temperature)
  • 12 oz. semi-sweet chocolate chips
  • 10 Tbsp. butter
  • 1/4 c. brandy
  • 4 oz. large chocolate bar, shaved
  • 1 c. whipped cream

Method

  • Melt butter and chocolate chips in top of double boiler (or on low power in microwave).
  • Beat in egg yolks, one at a time.
  • Cool slightly.
  • Stir in brandy (or Kahlua or any flavored liquer). Beat egg whites into stiff peaks.
  • Fold whites into the chocolate mixture, gently blending.
  • Spoon into 8 separate dishes or 1 large dish.
  • Refrigerate.
  • Before serving, garnish with whipped cream and shaved chocolate curls.
