Ingredients
- 8 eggs (room temperature)
- 12 oz. semi-sweet chocolate chips
- 10 Tbsp. butter
- 1/4 c. brandy
- 4 oz. large chocolate bar, shaved
- 1 c. whipped cream
Method
- Melt butter and chocolate chips in top of double boiler (or on low power in microwave).
- Beat in egg yolks, one at a time.
- Cool slightly.
- Stir in brandy (or Kahlua or any flavored liquer). Beat egg whites into stiff peaks.
- Fold whites into the chocolate mixture, gently blending.
- Spoon into 8 separate dishes or 1 large dish.
- Refrigerate.
- Before serving, garnish with whipped cream and shaved chocolate curls.
